Spiced Apple Rye Cake

INGREDIENTS
1/2 cup unsalted butter
2/3 cup sugar
3-4 medium apples, peeled and diced juice of half a lemon or lime
1/2 teaspoon ground cinnamon
2 tablespoons brown sugar
2 eggs
1/2 cup flour
1/2 cup rye flour
1 teaspoon baking powder
1/4 teaspoon sea salt
PREPERATION
Preheat oven to 350.
Line the base of a 6-inch circle or 7-inch square pan with parchment paper. Put the butter and sugar into a stand mixer and beat till light and fluffy.
Place the apple chunks in a bowl with juice of the half lemon. Toss the apples with the cinnamon and demerara sugar.
Add the eggs one at a time to the butter and sugar. Sift the flours, baking powder and salt together, then fold them gently into the mixture.
Fold in spiced apples. Bake for forty-five minutes to an hour, until golden brown. Cool for ten minutes before turning out. Serve with whipped cream.
